What is a personal Chef?
I am glad you asked. Please allow me to introduce you to our custom services.

Several people have approached me and asked me to define a personal chef. some people are under the missconception that you go to a personal chef to cook one meal or one dish. Generally speaking, this is not the case. Most often, you hire a personal chef to cook for several hours and cook several dishes and meals. This basically means that we sit down and go over a menu plan and I will cook several main courses, side dishes, maybe some desserts and more. I will then package the meals according to your specifications and you can freeze what you will not be eating immediately. Think of this as your own personalized cooking service.

What areas do you serve?
We serve the Baltimore, Washington DC area. However, our dry goods can be shipped to anywhere in the Continental United States.

What is "Kosher Style"?
Kosher Style is not really traditional kosher. It usually refers to food that can be made Kosher, but is not in actuality kosher. In some states, the term is illegal as misleading under consumer protection laws. Your Kosher Chef does not make Kosher Style, we make real, traditional kosher food.

Do you have a Hechsher (Rabinic Supervision)?
No, we are technically not under a hechsher. The owner of Your Kosher Chef is an orthodox rabbi who keeps kosher and shabbat. The owner is present on all cooking jobs. All of the foods we use have one of the major hechshers on them. If we have a question about what is acceptable in your home, we will ask you. If there is anything you feel uncomfortable with, we will honor your concerns.

Why do you not have a hechsher?
Technically speaking, if we are cooking in your home, with your utensils and equipment, we do not need rabinic supervision. When we arive in your home, you are welcome to inspect all foods and packages that we bring in.

All of the ingredients for our dry goods products have reliable hechshers and nothing is cooked in our premesis. All we do is mix the different ingredients together and package them up and ship.

Can I be with you when you are preparing the food?
Sure. If you are especially concerned with the kosher aspects of what we do, you are welcome to supervise us.

Do you keep Chalav Yisroel?
Personally, no. However, it should not matter to you. If you do and we need dairy products, we will purchase only chalav yisroel products.

Do you keep Gebrackt?
No.

Recipe

Cinnamon Orange Chicken


3-4 pounds chicken cut into serving pieces
1 cup chicken broth
1 stick margarine
2 cups orange juice
1 cup raisins
Fresh black pepper to taste
1/4 teaspoon cinnamon
2 tablespoons flour

1. Heat margarine in large skillet, and brown chicken.
2. Remove chicken pieces to slow cooker as they brown.
3. Combine all other ingredients, except flour, mix well and pour over chicken.
4. Cover pot, turn on LOW and cook 4-6 hours, or until chicken is tender.
5. Remove 1 cup of sauce from the pot and combine with flour, mixing well.
6. Return sauce - flour mixture to pot.
7. Turn pot on HIGH, and cook additional half hour.
